There was a time when corn bread was a family dinner table staple. Most families, especially those who lived in the southern states, had corn bread just about everyday of the week. Families that could not afford white bread or wheat bread often had corn bread even for breakfast. It truly was that popular.
Because it was easy to make and the ingredients were plentiful many variations came about. You could make corn bread stuffing for your turkey, which is still popular today, in fact. Some people called it corn bread dressing, but it was all good, no matter what name it was given.
Further to the south, there was Mexican corn bread which used various spices and peppers to liven up the recipes. This type of cornbread quickly became very popular in the states as well. One of the things that many cooks enjoyed about it was that they could control the amount of “heat” in the cornbread, making it as hot as they liked.
Today, you can buy easy corn bread dressing mixes at the store. Many of these only require you to add water or perhaps an egg or two. By adding some flavors you can turn this simple mix into honey corn bread which is very good.
Most cookbooks will have at least one recipe for southern corn bread stuffing or sweet corn bread. Both of these are favorites around Thanksgiving time. Southern corn bread can also be varied by adding different spices or ingredients. Some people add almonds or raisins to give their corn bread a little extra kick.
Then there is the corn bread casserole which is incredibly versatile and enjoyed by many people the world over. As with regular cornbread, you can add various ingredients, including meats, to your corn bread casserole. In fact, you imagination is basically the only limit you have in this regard.
For desserts, you can have corn bread pudding, sweetened as much or as little as you desire. Corn bread salad is also a tasty treat, but by far the most common type of cornbread used today is the easy corn bread mixes that can be prepared and baked in just minutes. These mixes have been a great help in bringing corn bread back to the table. And you should also know that you can get gluten-free corn bread if you so desire.
